Rye bread has a complex flavor profile, and bodes particularly well to long and slow sourdough fermentation, for that flavor to develop even further. With hints of fruitiness and very subtle sourness, rye sourdough gives wonderful unique flavors that compliment the sour notes of this traditional style of bread.
